Ingredients
For the Cod & Vegetables:
4 cod fillets (or halibut or sea bass)
2 tbsp extra virgin olive oil
1 zucchini, sliced
1 red bell pepper, sliced
1 small red onion, sliced
1 cup cherry tomatoes, halved
3 garlic cloves, minced
1 tsp dried oregano
½ tsp paprika
Salt & black pepper, to taste
For the Creamy Sauce:
¾ cup heavy cream (or half-and-half)
¼ cup chicken or vegetable broth
2 tbsp grated Parmesan cheese
1 tsp Dijon mustard
1 tbsp fresh lemon juice
Zest of ½ lemon (optional)

For Garnish:
Fresh parsley or basil, chopped
Lemon wedges
Instructions
Preheat oven to 400°F (200°C). Lightly grease a baking dish.
Prepare vegetables:
Add zucchini, bell pepper, onion, and cherry tomatoes to the dish. Drizzle with olive oil, add garlic, oregano, paprika, salt, and pepper. Toss well.
Add fish:
Pat cod fillets dry, season with salt and pepper, and place over the vegetables.
Make the sauce:
Whisk cream, broth, Parmesan, Dijon mustard, lemon juice, and lemon zest in a bowl.
Bake:
Pour sauce evenly over fish and vegetables. Cover loosely with foil and bake for 18–20 minutes.
Finish uncovered:
Remove foil and bake an additional 8–10 minutes, until fish flakes easily and sauce thickens.
Serve:
Garnish with fresh herbs and lemon wedges. Serve hot.
