
INGREDIENTS:
- Tortellini pasta
- Salami
- Mozzarella cheese
- Cherry tomatoes
- Cucumber
- Olive oil
- Red wine vinegar
- Italian seasoning
- Salt
- Pepper
Instructions
- Cook the tortellini according to the package instructions. Once cooked, drain and let it cool.
- In a large mixing bowl, combine the cooled tortellini with diced salami, chopped mozzarella, halved cherry tomatoes, and diced cucumber.
- In a separate small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper to create a dressing.
- Drizzle the dressing over the salad mixture and toss everything together until evenly coated.
- Refrigerate the salad for at least 30 minutes before serving to allow the flavors to meld.

That is a truly mouth-watering photo of what sounds like a terrific salad.
I am going to save it for warmer temperatures. Today, it is, on awakening -14 below zero.
I will go back under the covers. But that salad looks great.
