(Serves 4):
2 lbs (900 g) boneless chicken breasts or thighs
2 tbsp olive oil or butter
3 cups mushrooms, sliced
3 cups fresh spinach
4 garlic cloves, minced
1 cup heavy cream
½ cup cream cheese, softened
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp paprika
Salt & black pepper to taste
½ cup shredded mozzarella cheese (optional, topping)

Instructions:
Preheat oven:
Preheat to 375°F (190°C). Lightly grease a baking dish.
Season chicken:
Season chicken with salt, pepper, paprika, and Italian seasoning.
Arrange in the baking dish.
Sauté vegetables:
Heat oil in a skillet.
Sauté mushrooms until golden (5–6 minutes).
Add garlic and spinach, cook until wilted. Remove from heat.
Make creamy sauce:
In a bowl, mix heavy cream, cream cheese, and Parmesan until smooth.
Assemble:
Spoon mushroom-spinach mixture over chicken.
Pour creamy sauce evenly on top.
Sprinkle mozzarella if using.
Bake:
Cover with foil and bake 30 minutes.
Uncover and bake 10–15 minutes until bubbly and lightly golden.
Serve:
Rest 5 minutes before serving.
