Garlic Chicken Fried Rice

Here is a tasty twist on a classic dish: Garlic Chicken Fried Rice.

Tender chicken, aromatic garlic and fluffy rice  stirred to perfection.

Ingredients

● 2 cups of cooked white rice, refrigerated

● 2 cubed chicken breasts

● 2 minced garlic cloves

● 1 cup of mixed vegetables (such as peas, carrots and corn)

● 2 eggs beaten

● 2 tablespoons of soy sauce

● 1 tablespoon of sesame oil

● Salt and pepper to taste

● Green onions for garnish (optional)

Instructions

In a large skillet or wok, heat oil over medium-high heat. Add the diced chicken and minced garlic and cook until the chicken is cooked through and the garlic is fragrant.

Move the chicken to one side of the pan and add the beaten eggs to the other side. Scramble the eggs until fully cooked.

Add mixed veggies to the pan and cook until done
Add refrigerated rice to the pan and stir it all together, breaking all the rice puffs.

Pour soy sauce and sesame oil over the rice mixture, and continue to stir until everything is evenly combined.

Season with salt and black pepper to taste.

Garnish with chopped green onions if so desired.
Serve hot and enjoy!

  1. Chicken fried rice is a regular feature from our kitchen! No corn, though, thank you. Peas, carrots, celery, onion, maybe mushrooms, maybe peanuts… but yeah, no corn, if you please. 😁
