
I love this as a side to Margarita Chicken or Grilled Kabobs. It’s a delicious complement to other sides such as rice, seasoned broccoli or a fresh garden salad.
This is definitely my favorite simple version of corn salsas tasted in Cabo San Lucas, Grand Cayman Island and on the San Antonio River Walk.
I’ve also tried it with avocados. Good too!
Ingredients
1/4 cup jalapenos, roasted
1/2 cup corn
1/4 cup black beans, drained
1/4 cup red onions, diced
1/4 cup red bell pepper, diced
1 Tbs cilantro
1 Tbs lime juice
tad of salt, to taste

Prepare
Roast jalapenos and corn together then place into a bowl.
Stir in drained black beans, diced red onion, diced red bell pepper, cilantro and lime juice with a pinch of salt.
Okay…got it. Will try making this tomorrow. Sounds yummy and I believe I had this in San Antonio. So now you’re competing with Martha??
