Ingredients For the Chicken
500g (1 lb) boneless chicken breasts or thighs, cut into bite-size pieces
1 ½ tbsp olive oil
3 garlic cloves, minced
¼ cup fresh cilantro, finely chopped
1 tbsp lime juice
½ tsp salt
½ tsp black pepper
½ tsp paprika
½ tsp cumin (optional, adds depth)

For the Kiwi Strawberry Salsa
2 ripe kiwis, peeled and diced
5–6 strawberries, diced
2 tbsp red onion, finely chopped
1 tbsp fresh cilantro, chopped
1 tbsp lime juice
Pinch of salt
Optional: ½ small jalapeño, finely minced (for heat)
Instructions
- Marinate the Chicken
In a bowl, combine: olive oil, garlic, cilantro, lime juice, salt, black pepper, paprika, and cumin.
Add chicken pieces and coat well.
Let marinate for 15–20 minutes (or up to 1 hour for deeper flavor).
- Prepare the Kiwi Strawberry Salsa
In another bowl, mix: diced kiwi, strawberries, red onion, cilantro, lime juice, and salt.
Add jalapeño if you want it spicy.
Stir gently and refrigerate until serving.
- Cook the Chicken Bites
Heat a skillet over medium-high heat.
Add a drizzle of oil if needed.
Add the marinated chicken bites in a single layer.
Cook 4–5 minutes without moving to get a good sear.
Flip and cook another 3–4 minutes until golden and cooked through.
