Hearty Tuscan White Bean Soup

Place all of these ingredients in this order in a large pot, cover and cook on a stove to your liking. Stir occasionally.

1 tbsp olive oil

1 onion, chopped

2 garlic cloves, minced

2 carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes (no added salt)

1 can (15 oz) white beans, drained and rinsed (like cannellini or great northern)

4 cups low-sodium vegetable broth or chicken broth

2 cups chopped kale or spinach

1 tsp dried basil

1 tsp dried oregano

1/2 tsp dried thyme

Salt and pepper to taste

1 bay leaf (optional)
