Anti-Inflammatory Turmeric Chicken Soup

Ingredients:

1 lb chicken breast or thighs, diced

1 tablespoon olive oil

1 onion, chopped

2 garlic cloves, minced

1 teaspoon fresh ginger, grated

1 teaspoon ground turmeric

4 cups chicken broth

2 carrots, sliced

2 celery stalks, sliced

1 cup kale or spinach, chopped

Salt and pepper to taste

Fresh parsley for garnish

Directions:

Heat olive oil in a large pot over medium heat. Sauté onion, garlic, and ginger until fragrant.

Add turmeric and stir for 30 seconds.

Add chicken and cook until lightly browned.

Pour in chicken broth, then add carrots and celery. Bring to a boil, then reduce heat and simmer 15-20 minutes until vegetables are tender.

Stir in kale or spinach and cook 2-3 minutes until wilted.

Season with salt and pepper, garnish with parsley, and serve warm.
