Ingredients
- 4-6 cucumbers (preferably English or Greek), peeled and thinly sliced
- 2-3 large tomatoes, diced
- 1/2 cup red onion, thinly sliced
- 1/4 cup extra-virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese (optional)
- Fresh parsley or dill, chopped (optional)
