Simply Delicious Angel Hair With Basic Tomato Sauce

From an Island in New Hampshire, our favorite reader Kathleen shared this Angel Hair with Basic Tomato Sauce (from Pasta Grammar on Youtube: Ava from Calabria) recipe.

We tried it and absolutely understand why it was highly recommended.

In fact, we made extra sauce and jarred it to use for a next round of leftover pasta!

Directions:

In one sauce pan, cook desired amount of angel hair pasta in salted water till al dente. Drain at once and set aside when done; in the meantime, make the sauce. 

In another saucepan, heat about a quarter inch of olive oil and saute one clove garlic, whole or, if desired, minced.

If whole, remove when sauce is done. Saute for thirty seconds to a minute, then add enough good crushed or pureed tomatoes for the amount of angel hair you are making to cover.

Simmer, add salt, pepper, basil leaf to taste, for about two minutes, till nice and hot, and then add your pasta back in. Lower heat, and fold into sauce gently till completely covered. 

Serve with grated Parmesan and/or Romano cheese.
