Here’s the thing about Roasted Green Beans: they seem simple on the surface, and they are pretty simple to throw together. But the flavor is so much more than that!
The crunchy almonds, the fragrant garlic, the zippy zesty lemon—all of it goes to complement and enhance the garden-fresh, tender-crisp green beans. And the green beans serve as a perfect platform for those other flavors!
Roasted Green Beans are a perfect circle of flavors, which your tastebuds will follow round and round long after eating it! Marvelous!

Ingredients
- 1 pound fresh green beans, ends trimmed
- 2 tablespoons olive oil
- 1/3 cup almonds, sliced
- 3-4 cloves garlic, minced
- 1/4 cup panko breadcrumbs
- zest of 1 lemon
- 1/4 cup crumbled feta cheese (or parmesan)
- salt, to taste
- pepper, to taste

Directions
Step 1 -Preheat the oven to 450 degrees F.
Step 2 -Place the green beans on a large rimmed baking sheet.
Step 3 -Drizzle the oil over the green beans.
Step 4 -Sprinkle the almonds, the garlic, the breadcrumbs, crumbled cheese, the lemon zest, the salt, and the pepper over the green beans and toss to coat.
Step 5 -Spread the green beans in a single layer and roast until soft but still slightly firm, about 12-15 minutes.
Step 6 -Serve warm.

Notes
● You can substitute the almonds with walnuts.
● If you want a more subtle cheese, then sprinkle with crumbled goat cheese or even shaved Parmesan.
● Store leftovers in an airtight container in the fridge up to 3 days. Eat them cold in a salad or warm them on a sheet pan in a 350-degree F oven for 2-3 minutes. They are best eaten when they are freshly roasted.
